1 1/2 cups of flour
1 tsp. of salt
1 tsp. of baking soda
1 cup of Crisco
1/2 cup of sugar
1 cup of brown sugar
1 tsp. of vanilla extract
2 cups of oatmeal
12 oz. of chocolate chips
Combine ingredients and place a teaspoon of dough on a greased cookie sheet.
Cook at 350 degrees for about 15 minutes. Eat warm with a glass of milk. :)
The Best Sweet Potato Casserole Ever
6 large sweet potatoes
2 eggs, beaten
1 stick butter, melted
1 teaspoon vanilla, or more if you like
½ cup evaporated milk
¾ cup sugar
Topping: 1 cup light brown sugar, 1/3 cup flour, 1/3 cup melted butter, 1 cup chopped pecans
Bake sweet potatoes at 350 degrees until very soft and let cool to the touch (about an hour). Remove skins of potatoes and cut the potatoes into large chunks. Mix in the beaten eggs, melted butter, vanilla, evaporated milk, and sugar until smooth. Put into 13×9 in baking dish. For the topping, combine light brown sugar, flour and pecans. Then pour in the melted butter. Mix all these ingredients well. Crumble topping over top of potato mixture (I double the amount of topping!). Cook at 350 degrees for approximately 45 minutes or until bubbly.
Mom/Grandma Johnson’s Bread Stuffing
I have never been a fan of stuffing/dressing (cornbread or bread-based), but this stuffing really is the best. I love making this for Thanksgiving and Christmas dinner!
2 loaves bread
3 eggs, slightly beaten
2 stick butter
4 stalks celery, diced
2 small onion or onion salts
2 chicken boulion, melted in 2 1/2 cups hot water
Break bread into pieces, not too small. Saute butter, celery, onion until glossy and soft.
Mix with bread followed by eggs and the hot water. Pour into 13×9 in baking dish.
Bake about 30 min. at 350 and then cover for an additional 15 min.
